Here’s what to look for on the labels:
Virginity: refers to the mashing method of oil extraction that makes all extra-virgin and virgin oils cold-pressed, also called first-pressed.
Extra-virgin uses higher quality olives that are picked and packaged within 24 hours- get this!
Purity: When you see this on the label, it is an indicator the manufacture is of a lower grade, due to its extraction process- don’t get this!
Filtration: simply means some manufacturer’s process captures tiny bits and pieces, making the oil slightly cloudy. Use unfiltered withing 6 months, buy filtered otherwise.
Our rule of thumb to play it extra-safe is to only buy in dark glass or metal with a tight seal (exposure to air and light shortens its shelf life) and most of all only buy olive oil with an expiration stamped on the label.
